About this wine

No awards found. Pegasus Bay Finale Noble Semillon Sauvignon Blanc is a luxurious North Canterbury dessert wine made only in exceptional vintages. Inspired by classic Sauternes, it’s crafted from botrytised Semillon and Sauvignon Blanc, fermented and matured in French oak barriques. Aromas of dried apricot, honeycomb, lemon curd, and toffee apple unfold with hints of coconut and BBQ pineapple. The palate is rich, multilayered, and decadently textured, balanced by invigorating acidity that brings focus and finesse. A long, harmonious finish makes it perfect with blue cheese, crème brûlée, or fruit-based desserts.

Food pairing suggestions

Ideal with rich, pungent cheeses like blue or gorgonzola, where the wine’s sweetness balances the bold, savoury flavours beautifully. It’s equally suited to desserts spiced with cinnamon, nutmeg, or clove.

It also pairs well with cured meats like prosciutto, smoked foods, and creamy cheeses such as brie or mascarpone. Fruit-based desserts, vanilla and caramel flavours, pastries, white starches, and fresh berries complement the wine’s indulgent character.
