About this wine
Paul Bara Annonciade 2008 is the house’s only barrel-fermented cuvée, a prestige Champagne aged 14 years on lees before release. A blend of 70% Pinot Noir and 30% Chardonnay from Bouzy Grand Cru vineyards, it offers rich, oxidative complexity with aromas of ripe stone fruit, bruised apple, dried verbena, and toasted brioche. The medium to full-bodied palate delivers rounded fruit, subtle honey and cold butter notes, balanced by vibrant acidity and a silky mousse. Disgorged in December 2022 with a 4 g/L dosage, this is a beautifully mature, expressive Champagne. Ideal with lobster thermidor, roast chicken, or aged comté.

A classic match for fresh seafood, especially oysters, mussels, and other molluscs, where its bright acidity enhances briny flavours perfectly.
It also pairs wonderfully with cured meats like prosciutto, pork, poultry, and seafood including grilled, fried, or raw fish. Smoked foods, poached or steamed chicken, brie, camembert, cheddar, onion, garlic, green vegetables, toasted nuts and seeds, beans, peas, capsicum, spicy dishes, aromatic spices, pasta, potatoes, and even fresh fruit or berries complement the wine beautifully.
